You've got just enough time to hold one more outdoor barbeque before it gets too cold, and just to help you out I'm going to share some of my favorite burger recipes. If you have a charcoal grill all the better, but they work on a Foreman grill too. Get creative with your bun choice-plain white bread buns have no flavor. The meal gets rounded out with Grilled Veggies and Banana Boat S'mores.
Basic Burger
Each variation makes 6-8 burgers.
Ingredients:
2 pounds ground beef.
1 egg, beaten.
1 teaspoon chopped garlic-canned is fine.
1 handful of minced onion.
2 tablespoons Worcestershire sauce.
Use your hands to mix together well. Form the mixture into patties about ½ inch thick. Grill to desired doneness, about three minutes a side for medium, or five minutes on a Foreman grill.
Black and Bleu Burger
A cajun specialty, this burger takes the basic recipe above an extra step.
Extra ingredients:
1 cup bleu cheese.
Cajun seasoning mix.
8 slices cheese.
Make a ball out of 2 tablespoons of bleu cheese, cover with a cup of beef mixture and flatten into patty. Sprinkle the outside with Cajun seasoning mix. Grill about three minutes per side. Top with cheese.
Island Chicken Burger
Extra Ingredients:
2 pounds ground chicken (instead of beef).
1 small can pineapple.
Teriyaki sauce.
Prepare basic burger recipe, substituting ground chicken for beef. Make sure to use red onions. Tear apart pineapple into small bits. Add to burger mixture. Form patties and grill. Top with teriyaki sauce.
Jalapeno Poppers
Extra Ingredients:
Sliced jalapenos
1 cup shredded cheese
Start with the basic burger and add in as many jalapenos as you can handle and about a cup of shredded cheese. Form into patties and grill.
Veggie Burger
2 cups brown rice.
2 cups chopped assorted veggies.
1 egg, beaten.
1 cup grated cheese.
1 teaspoon garlic.
2 tablespoons Worcester sauce.
Good sprinkling of spice mix.
Optional: onions, green peppers, mushrooms.
Chop all veggies into mini pieces. Mix everything together. Form patties, grill until just crispy on the outside.
Grilled Veggies
Slice vegetables thinly-zucchini, eggplant, yellow squash and portabella mushrooms are my favorites. Brush with oil and sprinkle with spice mix or thyme. Grill just until they become slightly soft, about a minute or so a side.
Banana Boat S'mores
Each banana makes about two s'mores.
Slit the unpeeled banana down the side. Stuff it with as many marshmallows and mini chocolate chips as possible. Cover it with aluminum foil and set it on the grill for about five minutes. Spoon the mixture onto graham crackers.
