voila!: a cooking column

With the World Series this week, and football season in full swing, Valentine just won't cut it for game-time refreshments, and you can only eat pizza so many times. Better than chips and wings, but not too much harder to get together, these recipes are quick, easy and perfect for watching sports. All of these recipes can be made with minimal effort and (with the exception of the wings) no special equipment-just a bowl and a knife.

Easy Crock-pot Wings

5 1/2-pounds chicken wings or legs

1 bottle barbeque sauce (any brand, any flavor)

Bleu cheese dressing (Marie's Chunky Bleu is a good choice)

Celery sticks

Cover the chicken with barbeque sauce. Cook on medium for six hours in crock-pot. Serve with bleu cheese dressing and celery sticks.

Homemade Can Chili

1 lb ground beef (optional)

1 12-oz can dark red kidney beans

1 12-oz can cannelini (white kidney) beans

1 12-oz can garbanzo beans (chick peas)

1 12-oz can hominy beans (yellow or white)

1 12-oz can black beans

2 28-oz cans crushed Italian-style tomatoes

4 oz-can green chilies

Chili powder or chili seasoning mix, to taste

Tabasco, to taste

1 cup cheddar cheese, shredded

1 cup sour cream

1 bunch scallions or 1 onion, diced

Lift the legs of Foreman grill to level. Brown ground beef until cooked through, about eight minutes. Combine beans, tomatoes, chilies, seasoning and tabasco in a large microwave-safe bowl and heat about 10 minutes in the microwave. Alternatively, put everything in a crock pot and cook on low for two hours until flavors mix. Serve with shredded cheese, sour cream and onions.

Better Chips and Salsa

1 jar good quality salsa

1 cup chopped mango, pineapple or peach-in any combination

1 bunch fresh cilantro, chopped

Combine salsa, fruit and cilantro to taste. Serve with blue corn chips.

Guacamole

1 jar good quality salsa

3 avocados

Juice of 1 lime

1 bunch fresh cilantro, chopped

Combine salsa, avocado, lime juice and cilantro to taste. Serve with chips and veggies.

Deviled Eggs

6 hard-boiled eggs, shells removed

2 tablespoons mayonnaise

1/2 teaspoon mustard

1 dash tabasco

Paprika for color (optional)

Salt and pepper

Slice eggs in half. Remove yolks and mash together with mayonaise, mustard, tabasco, salt and pepper. Spoon mixture into whites. Sprinkle paprika on top for color. Try adding a lump of crab meat to yolk mixture for an added kick.

Fruit Dip

1 cup cream cheese, softened

1/2 cup brown sugar

2 teaspoons vanilla extract (1 capful is about a teaspoon)

1 tablespoon cinnamon sugar or maple syrup

Serve with sliced apples, pears, or other fruit, or graham crackers.
